The green sauce that fixes leftovers

Day-four rice and a plain chicken thigh become dinner. I make it every Sunday and it's gone by Thursday.

Ingredients

  • 2 packed cups soft herbs — parsley, cilantro, dill, or any two
  • 3 scallions, roughly chopped
  • 1 jalapeño, seeds out if you like
  • 2 cloves garlic
  • 1/4 cup rice vinegar or lime juice
  • 3/4 cup olive oil
  • 1 tsp kosher salt
  • 1 tsp honey

Method

  1. Put everything except the oil in a blender or food processor and pulse until roughly chopped.
  2. With the motor running, pour the oil in a thin stream. Stop as soon as it comes together — over-blending heats the herbs and turns the whole thing army green.
  3. Taste and adjust: more salt if it's flat, more vinegar if it's heavy, more honey if the jalapeño got away from you.
  4. Store in a jar with a thin film of oil on top. Bright green for three days, still good for five.
